Cucumber Dip

Cool your kiddos off with this delicious cucumber dip. Dip into a refreshing summer snack with a side of baby carrots or some pita chips!

Before You Cook

Ingredients
  • 1 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp minced fresh dill
  • 1 clove garlic, minced
  • 1 cucumber, peeled and diced finely or shredded
  • 1 teaspoon salt

Directions
  1. Shred with box grater or finely chop cucumber. Mix cucumber and 1 tsp salt in small bowl; cover and chill for 3 hours.
  2. In a small bowl, mix yogurt, lemon juice, dill and garlic.
  3. Squeeze out as much excess liquid as possible from cucumber and salt mixture.
  4. Stir cucumber into yogurt. Season with pepper and additional salt if needed.
  5. Cover and chill until ready to serve alongside celery sticks, baby carrots or pita chips!
Makes 3-4 servings.
