Cool your kiddos off with this delicious cucumber dip. Dip into a refreshing summer snack with a side of baby carrots or some pita chips!

- 1 cup plain Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp minced fresh dill
- 1 clove garlic, minced
- 1 cucumber, peeled and diced finely or shredded
- 1 teaspoon salt
- Shred with box grater or finely chop cucumber. Mix cucumber and 1 tsp salt in small bowl; cover and chill for 3 hours.
- In a small bowl, mix yogurt, lemon juice, dill and garlic.
- Squeeze out as much excess liquid as possible from cucumber and salt mixture.
- Stir cucumber into yogurt. Season with pepper and additional salt if needed.
- Cover and chill until ready to serve alongside celery sticks, baby carrots or pita chips!
