This spinach and rice bowl is perfect for breakfast but is a hearty meal for any time of day. Add extra veggies and a dash of your favorite hot sauce to spice it up!
- Take a minute to read through the recipe before you start.
- Wash all fresh produce and work surfaces.
- Wash your hands at the beginning and throughout the cooking process.
- Children should ask for permission before using appliances and sharp knives.
- ½ cup cooked brown rice
- ½ cup spinach (additional vegetables are optional)
- ½ tbsp. butter
- 1 large egg
- pinch of salt and pepper
- splash of hot sauce (optional)
- 1 slice of whole grain bread (optional)
- Place one inch of water in a small sauce pan. Bring it up to a boil over high heat with the lid on top. Once it reaches a full boil, add the egg in the pot, replace the lid, and let boil/steam in the shallow water for exactly six minutes. Cool quickly and peel immediately.
- While the egg is cooking, add ½ cup of precooked brown rice to a bowl along with ½ cup spinach.
- Microwave on high until heated through (about two minutes, stirring once halfway through).
- Season the spinach and rice with butter and a pinch of salt and pepper. Toast slice of whole grain bread for desired time in toaster.
- Once the egg is cooked and peeled, add it to the bowl with the spinach rice, chop the egg to your preference, and drizzle hot sauce overtop. Enjoy!
