Easy Greek Salad

This Mediterranean salad is fresh and delicious for any time of year. Try serving it with your favorite protein or as is for a vegetarian entree, 

Before You Cook
  • Take a minute to read through the recipe before you start.
  • Wash all fresh produce and work surfaces.
  • Wash your hands at the beginning and throughout the cooking process.
  • Children should ask for permission before using appliances and sharp knives.
  • 6 romaine lettuce leaves (torn into 1 inch pieces)
  • 1 medium cucumber peeled and sliced
  • 1 medium tomato chopped
  • 1/2 cup red onion sliced
  • 1/3 cup feta cheese crumbled
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon oregano (dried)
  • 1/2 teaspoon salt
  1. Wash produce. Tear lettuce into 1 1/2 inch pieces. Peel and slice cucumber. Chop tomatoes. Slice red onion.
  2. Combine lettuce, cucumber, tomato, onion, and cheese in large serving bowl. Whisk together oil, lemon juice, oregano and salt in small bowl.
  3. Pour dressing over lettuce mixture and toss until coated.  Serve immediately.
Makes 6 servings.
