This Mediterranean salad is fresh and delicious for any time of year. Try serving it with your favorite protein or as is for a vegetarian entree,
- Take a minute to read through the recipe before you start.
 - Wash all fresh produce and work surfaces.
 - Wash your hands at the beginning and throughout the cooking process.
 - Children should ask for permission before using appliances and sharp knives.
 
- 6 romaine lettuce leaves (torn into 1 inch pieces)
 - 1 medium cucumber peeled and sliced
 - 1 medium tomato chopped
 - 1/2 cup red onion sliced
 - 1/3 cup feta cheese crumbled
 - 2 tablespoons olive oil
 - 2 tablespoons lemon juice
 - 1 teaspoon oregano (dried)
 - 1/2 teaspoon salt
 
- Wash produce. Tear lettuce into 1 1/2 inch pieces. Peel and slice cucumber. Chop tomatoes. Slice red onion.
 - Combine lettuce, cucumber, tomato, onion, and cheese in large serving bowl. Whisk together oil, lemon juice, oregano and salt in small bowl.
 - Pour dressing over lettuce mixture and toss until coated.  Serve immediately.
