A fresh salad with strawberries, feta cheese and toasted nuts.
- 5 ounces (about 5 to 6 cups) raw spinach (it’s usually prewashed so easy to use!)
- 1 cup sliced strawberries
- ¼ cup chopped toasted pecans or walnuts (optional, but adds healthy plant-based protein)
- ¼ crumbled low-fat feta cheese or other salty, crumbly cheese (optional)
- 1 tbsp lemon juice
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 2 teaspoon honey
- ¼ teaspoon black pepper
- ¼ teaspoon salt
- ½ teaspoon sriracha sauce or hot pepper sauce (optional)
- Take a minute to read through the recipe before you start.
- Wash all fresh produce.
- Wash your hands at the beginning and throughout the cooking process.
- Children should ask for permission before using appliances and sharp knives.
- Place spinach, strawberries, nuts, and cheese in large bowl, toss to combine (or, portion out all items on separate salad plates).
- Make the dressing by combining lemon juice, olive oil, balsamic vinegar, honey, black pepper, salt, and Sriracha or hot pepper sauce in a small jar with a lid, if possible, or in a small bowl with tall sides. Shake the jar briskly to combine, or whisk with a fork to combine. You may also use premade dressing.
- Pour dressing into salad bowl and toss gently to coat salad, or pour some dressing on each salad plate. Serve immediately.
