Baked Parmesan Squash

This savory recipe can be served as a healthy snack, appetizer or side alongside your next meal. Yum! 

  • 4 zucchini and/or squash quartered lengthwise
  • 1/2 cups grated parmesan
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley leaves (optional)
Before You Cook

  1. Preheat oven to 350° F
  2. Coat a baking rack with cooking spray and place on baking sheet. Set aside.
  3. Quarter zucchini/squash lengthwise.
  4. In a small bowl, combine parmesan, thyme, oregano, basil, garlic powder, salt and pepper.
  5. Place zucchini and/or squash onto prepared baking sheet. Drizzle with olive oil and parmesan mixture.
  6. Place into oven and bake until tender, about 15 minutes. Broil for about 2-3 minutes or until crisp and golden brown.
  7. Serve immediately, garnished parsley if desired.
