Grilled Vegetables

Do you need a side dish to throw on the grill with your protein of choice for a weeknight meal? Want something filling to help round out that summer cookout? This recipe fills the need for a perfect, nutritious side that’s flavorful, especially if you add peppers and squash from your own garden or local farmers market.

  • 2 Tablespoons vegetable oil
  • 1 Tablespoon lemon juice
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 3 cups fresh vegetables (We used potatoes, squash and red pepper)
  1. Preheat the grill.
  2. In small bowl, mix the oil, lemon juice, herbs, salt and pepper.
  3. Wash, peel (if necessary) and cut vegetables to get 3 cups worth.
  4. Toss vegetables with oil mixture.
  5. Lay out foil, pour vegetable mixture on top and fold sides over to make a sealed foil pouch.
  6. Grill vegetables for 20 minutes or until fork tender.
