This recipe fills the need for a perfect, nutritious side that’s flavorful, especially if you add peppers and squash from your own garden or local farmers market.
- 2 Tablespoons vegetable oil
- 1 Tablespoon lemon juice
- ½ teaspoon Italian seasoning
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 3 cups fresh vegetables (We used potatoes, squash and red pepper)
- Preheat the grill.
- In small bowl, mix the oil, lemon juice, herbs, salt and pepper.
- Wash, peel (if necessary) and cut vegetables to get 3 cups worth.
- Toss vegetables with oil mixture.
- Lay out foil, pour vegetable mixture on top and fold sides over to make a sealed foil pouch.
- Grill vegetables for 20 minutes or until fork tender.
