A delicious salad with fresh spinach and strawberries and a simple vinaigrette dressing.
Yield: 4 Servings
4 cups torn fresh spinach
1 cup sliced fresh strawberries
1 tablespoon finely chopped onion
1 1/2 tablespoons sunflower seeds, toasted (optional)
1/2 teaspoon sesame seeds, toasted (optional)
1 tablespoon canola oil
1 tablespoon red wine vinegar
1 1/2 tablespoons sugar
1/2 teaspoon mustard
1/4 teaspoon dried dill
1/8 teaspoon salt
Pinch garlic powder
- In a salad bowl, combine the spinach, strawberries, onion, sunflower kernels, and sesame seeds.
- In a jar with a tight-fitting lid, combine the remaining ingredients; shake well. (Dressing can also be whisked together in a small bowl.) Pour dressing over salad and toss gently. Serve immediately.
