Salad Surprise

Use your favorite greens, vegetables, fruits and dressing in this salad surprise! This is a great way to cut down on food waste and use what is in your fridge.

Before You Cook
  • Take a minute to read through the recipe before you start.
  • Wash all fresh produce and work surfaces.
  • Wash your hands at the beginning and throughout the cooking process.
  • Children should ask for permission before using appliances and sharp knives.
Ingredients for Salad
  • 4 cups of greens of your choice (kale, romaine lettuce, spinach, spring mix)
  • ½ cup of diced fruit of your choice (mandarin oranges, diced strawberries, blueberries, pineapples, raspberries, peaches)
  • 1 small onion, diced
  • dressing (create your own or use a favorite one you have on hand)
  1. Prepare the ingredients. Wash and tear or chop greens. Wash and slice/dice the fruit you selected.
  2. Prepare the salad. Gently toss together the greens and fruit. Add dressing right before serving.

Basic Vinaigrette
  • 6 tablespoons oil
  • 4 tablespoons apple cider vinegar
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
Italian Vinaigrette (Start with the Basic Vinaigrette and add:)
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 pinch of crushed red pepper flakes (optional)
  1. Combine all ingredients in a jar with a lid and shake well, or combine in a small bowl and whisk until smooth.
  2. Allow to stand for 10 minutes so flavors blend together.
  3. Contents may separate when stored. Shake or stir to re-mix before using.
