- 1 medium onion, finely chopped
- 2 carrots, chopped
- 2 zucchini, sliced
- ½ head of broccoli, chopped
- ¼ head of cauliflower, diced
- 4 tomatoes, diced
- 1 tsp basil
- ¾ shredded cheddar cheese
- nonstick cooking spray
- Preheat oven to 400° F.
- Add zucchini, broccoli, cauliflower, and chopped carrots to 9 in square baking dish. Mix together
- Coat skillet in nonstick cooking spray and place on medium-high heat. Add onions to skillet and cook until translucent.
- Add diced tomatoes and basil to skillet with onions. Cook together for several minutes until tomatoes have reduced.
- Pour tomatoes, onions and basil over vegetable mixture in baking dish.Cover dish with aluminum foil and bake for 40 minutes.
- Remove dish from oven, top with cheddar cheese
- Return to oven uncovered and bake for an additional 5 minutes to melt cheese.
- Allow to cool and serve!
