Ingredients:
4 teaspoons olive oil
4 teaspoons southwest seasoning (to make your own, see ingredients/recipe below)
1 to 1 1/2 pounds boneless, skinless chicken breasts
Directions: In a plastic zipper bag, mix the olive oil and southwest seasoning. Add chicken, seal bag and knead all ingredients together until the southwest seasoning mixture is evenly distributed on the chicken breasts. Place in refrigerator for at least 30 minutes.
Preheat and prepare grill. Place marinated chicken breasts on grill and cook over medium heat, turning and flipping chicken every 1 to 2 minutes until chicken is done/reaches an internal temperature of 165 F. Remove from grill and cover with a tent of aluminum foil for 5 minutes. Serve immediately.
Southwest Seasoning Mix
Time: 5 minutes; Makes 36 teaspoons
This southwest seasoning mix is quick and easy to make and salt-free but packed with flavor and little bit of heat. Prep time is five minutes.
Ingredients:
8 teaspoons cumin
8 teaspoons chili powder
4 teaspoons oregano
4 teaspoons smoked paprika
4 teaspoons coriander
4 teaspoons onion powder
1 tablespoon garlic powder
1 teaspoon black pepper
1/2 teaspoon cayenne pepper (more or less, if desired)
Directions: Mix all ingredients in a small jar or container, and store in a cool, dry place.
