Microbial Safety for Locally Processed Poultry

Small-scale poultry producers and processors across West Virginia have the ability to rent and use the West Virginia Farmers Market Association's Poultry Trailer, which offers a mobile processing space for on-farm use. To use this rental equipment, or even your own processing equipment, it's important to understand the on-farm processing best practices and food safety procedures.
