Day 11 - Holiday Hummus

Serves 8 

Ingredients:

  • 15-ounce can of garbanzo beans/chickpeas
  • 1 cup sundried tomatoes (packed in oil) + 1 to 2 tablespoons of the oil
  • ½ cup roasted red peppers
  • 1 to 2 canned chipotle peppers in adobo + 2 tablespoons of the sauce
  • ½ cup loosely packed cilantro leaves

Instructions:

  1. Combine first four ingredients in a food processor.
  2. Process until smooth.
  3. Add cilantro. Process until finely chopped and incorporated.
  4. Serve with whole-wheat pita chips or raw vegetables.
